Favourite Dishes

Food plays an important role during the Chinese New Year. It is a way of bringing everyone in the family together. The dishes prepared for the Chinese New Year dinner are different from those made during other days of the year. The names of the dishes express the wish for good luck in the coming year. Here are three dishes which are common at the Chinese New Year dinner. Those who are interested may try out the following recipes.


Braised Assorted Vegetables (Say Sik Sor Choy)

Ingredients:                           Sauce:
green vegetable      200 gm.           cornflour           1  tsp.
straw mushroom       1/3 can           stock              1/2 rice bowl
baby corn shoot      1/2 can
tomato (small)        2
stock                 2  rice bowls

Seasoning:
salt                  1  tsp.
cooked oil            1  tsp.

Method:
1. Prepare green vegetable. Cook with salt and oil in boiling water for 3
   minutes. Drain and cut into lengths.
2. Clean, scald and skin tomatoes. Remove seeds and cut into 4 wedges.
3. Prepare sauce.
4. Cook straw mushrooms, baby corn shoots, green vegetable and tomatoes
   separately in 2 bowls of stock for 2 minutes. Drain and dish up.
5. Make sauce. Pour on top of vegetables.

N.B.: Other seasonal vegetables can be used.

Steamed Stuffed Bean Curd (Jing Yeung Dow Fu)

Ingredients:                           Sauce:
fish fillet            75 gm.          salt                 1/4 tsp.
fat pork               15 gm.          sugar                1/2 tsp.
dried shrimp           10 gm.          cornflour             1  tsp.
dried peel              a small piece  light soya source     1  tsp.
spring onion            1 stalk        pepper               few shakes
bean curd               4 pieces       sesame oil           1/2 tsp.
Chinese parsley         1 sprig        oil                   1  tsp.
red chilli (for garnish)

Method:
1. Soak dried shrimps and dried peel.
2. Clean, wipe and mince fish and fat pork.
3. Clean, and finely chop dried shrimps, dried peel, spring onion and
   parsley.
4. Add in seasoning and mix well.
5. Rinse and cut each bean curd into 3 pieces and put onto a well-greased
   plate.
6. Dust each piece lightly with cornflour and stuff with the mixture.
7. Put to steam for 8-10 minutes.
8. Pour 1 Tbsp. cooked oil and 2 tsp. dark soya sauce on top. Garnish
   with red chilli rings.

Sweet and Sour Sparerib (Sang Chow Pie Gwut)

Ingredients:                           Sauce:
sparerib                  225 gm.      vinegar              2-1/2 Tbsp.
green pepper(small)        1           sugar                  3   Tbsp.
red chilli                 1           tomato ketchup        1/2  Tbsp.
pineapple ring             1  piece    Worcestershire sauce  1/4  tsp.
spring onion               1  stalk    light soya sauce      1/2  tsp.
egg                       1/2          dark soya sauce       1/2  tsp.
cornflour                  5  Tbsp.    salt                  1/4  tsp.
oil (for deep fat frying)              cornflour              1   Tbsp.
tomato (for garnish)                   water                  2   Tbsp.

Seasoning:
salt                 1/2 tsp.
pepper               few shakes

Method:
1. Wash and cut sparerib. Season.
2. Cut pineapple, green pepper and red chilli into pieces and spring onion
   into 1 inch lengths.
3. Prepare sauce.
4. Coat sparerib with beaten egg and then with cornflour
5. Heat oil and deep fat fry sparerib until golden brown. Put on a plate.
6. Heat 1/2 Tbsp. oil and fry green pepper and chilli until cooked. Put
   on a plate.
7. Cook sauce mixture until thickened. Add all the ingredients. Mix well
   and dish up. Garnish with tomato if desired.
